Solubility of anhydrous β-D-fructose in water

Abstract: The soly. of anhyd. β-D-fructose in H2O at various temps. was measured and calcd. At 0-55° it can be expressed by the relation s = 74.73 + 0.217t + 0.000 557t2. The measured and calcd. values agree within ±0.13%. The plot of the calcd. values of soly. is concave. The results agree with those of previous authors.
