Characterization of Starch from Marsh Mallow (Althaea  officinalis L.)

Abstract: From the insoluble residue of the roots of marsh mallow after extraction of mucilages starch has been isolated by various methods and characterized by amylose content, retrogradation as well as by susceptibility to α-, β-, and γ-amylases. The characteristics obtained have been compared to those of the potato starch.
